There is no single correct way to enjoy matcha. The best preparation is one that respects the tea and fits the experience you want.

Straight matcha

Begin with about 2 grams of sifted matcha and 60–80 grams of water below boiling. Whisk and adjust water to taste.

Iced matcha

Prepare a smooth warm-water base, then pour it over cold water and ice. This disperses more evenly than adding dry powder directly to ice water.

Matcha americano

Use a concentrated matcha base and add hot or cold water for a longer, milk-free drink.

Matcha latte

Tay Leaf’s standard uses 4 grams of matcha with 30 grams of 160°F water, plus milk. The stronger base keeps the tea recognizable.

Flavored drinks

Fruit, vanilla, brown sugar and floral ingredients can work well when measured carefully. Start with the matcha standard, change one component at a time and document the final build.
