Consistent matcha comes from controlling four variables: matcha weight, water weight, temperature and mixing method.
Step 1: Weigh
Use about 2 grams for a straight bowl or 4 grams for Tay Leaf’s latte-strength base.
Step 2: Sift
Press the powder through a fine sieve to remove compacted clumps.
Step 3: Add water
Start around 160°F. For a latte base, use 30 grams total; for straight matcha, use approximately 60–80 grams.
Step 4: Make a paste
Begin with part of the water and mix until no dry pockets remain.
Step 5: Whisk
Add the remaining water and whisk rapidly until smooth and lightly foamy.
Step 6: Serve promptly
Natural settling is normal because matcha is suspended rather than dissolved.
