A well-made matcha latte should taste like matcha—not merely sweet milk with green color. Expect a balance of creaminess, fresh grass, gentle vegetal notes, sweetness and umami.
What changes the flavor?
- Matcha: Origin, harvest, freshness and dose set the foundation.
- Water: Excessive heat can emphasize bitterness.
- Milk: Dairy and plant milks contribute different sweetness, fat and texture.
- Sweetener: A small amount can round the cup; too much hides the tea.
Tay Leaf’s flavor standard
Kyoto Teien is designed to be smooth, creamy and low in bitterness, with mellow grassiness, sweet nuttiness and rich umami. The house latte base uses 4 grams of matcha with 30 grams of 160°F water.
If your latte tastes weak
Reduce milk or sweetener before automatically adding more matcha. Change one variable at a time.
