Water temperature makes a difference in every bowl of matcha. Around 150°F (66°C), matcha tends to taste softer and mellower, letting its natural sweetness and umami shine. Moving toward 175°F (79°C) can bring a bolder flavor, while hotter water may emphasize bitterness and astringency. For Tay Leaf matcha, we recommend starting at 150°F-160°F and adjusting to your taste. The Stagg EKG Pro’s precise temperature control makes it easy to find your preferred setting and return to it each day.
