A mango matcha latte combines tropical fruit, creamy milk and a concentrated first-harvest matcha base. This 16 oz iced recipe includes a fresh mango component, commercial café options and measured starting ranges for purées and syrups.
Mango Matcha Latte Recipe
Yield: One 16 oz iced drink
Preparation time: Approximately 5 minutes
Matcha: 4 grams (about 2 tsp)
Sweetness: Adjustable
Fresh-fruit version
- 4 grams (about 2 tsp) Kyoto Teien matcha
- 30 grams (about 2 tbsp) filtered water at 160°F
- 35 grams (about 3⅜ tbsp) homemade mango component
- Approximately 145 grams (about ⅝ cup) milk or oat milk
- Ice
Homemade Mango Component
Approximate yield: 220–230 grams (about ⅞–1 cup), enough for about six drinks
- 200 grams (about 1¼ cup) very ripe mango flesh
- 15–25 grams (about 3 tsp to 1⅔ tbsp) cold filtered water, as needed
- 0–10 grams (about up to 2 tsp) sugar or simple syrup, only if needed
- Blend the mango until completely smooth.
- Add water gradually until the purée pours easily but still has body.
- Taste before adding sugar. Very ripe mango may need none.
- Strain if the mango is fibrous.
- Weigh 35 grams (about 2⅓ tbsp) per drink.
Avoid adding much citrus to a dairy latte component because added acidity can encourage milk separation. If brightness is needed, test a very small quantity in the complete drink.
Café Mango Options
- Monin Mango Purée: Start with 25–35 grams (about 1⅔–2⅓ tbsp). It is already sweetened, so do not automatically add more syrup.
- 1883 Création Fruits Mango: Start with 25–35 grams (about 1⅔–2⅓ tbsp) and adjust for the product’s texture and sweetness.
- Torani Mango Real Fruit Smoothie Mix: Start with 25–30 grams (about 1⅔–2 tbsp) because it is designed as a thick, sweet fruit base.
- Monin or 1883 Mango Syrup: Start with 12–18 grams (about 2⅜–3⅝ tsp) and use approximately 155–160 grams (about ⅔ cup) of milk because syrup contributes less body and volume than purée.
For a fruit-forward menu description and visible layer, choose purée. For the fastest, cleanest workflow, choose syrup. Check the current product label for ingredients, allergens and storage directions.
How to Make an Iced Mango Matcha Latte
- Sift 4 grams (about 2 tsp) of matcha into a bowl or mixing cup.
- Add approximately 15 grams (about 3 tsp) of water at 160°F and mix into a smooth paste.
- Add the remaining 15 grams (about 3 tsp) of water and whisk or froth until evenly dispersed.
- Add the mango component to a 16 oz glass.
- Fill with ice and add the measured milk.
- Pour the matcha base on top.
- Stir thoroughly before drinking.
For Beginners at Home
Start with naturally ripe mango and no added sweetener. Frozen mango can work after thawing; blend it completely and add water only as needed for a pourable texture.
For Cafés
Test the chosen mango component with the café’s actual milk, ice and cup. Weigh at least five pump dispenses and document the average rather than assuming every pump delivers the same weight.
Prepare house-made mango in small batches with clean equipment, cool promptly, keep covered and refrigerated, and follow local food-safety requirements. Use small daily batches as the Tay Leaf quality standard unless the café validates a longer procedure.
For batched matcha service, portion approximately 34 grams (about 2 tbsp + 1 tsp) of prepared Tay Leaf café base per drink.
Adjusting the Flavor
- More matcha-forward: Reduce mango or milk slightly.
- More mango-forward: Increase purée in 5-gram increments.
- Less sweet: Choose unsweetened mango or reduce added syrup.
- Strong commercial mango base: Balance fruit and sweetness before testing 5 grams (about 2½ tsp) of matcha.
Troubleshooting
The mango is too thick
Blend thoroughly and add cold water in small measured increments.
The latte tastes overly sweet
Reduce added syrup or switch to an unsweetened fruit purée.
The matcha tastes weak
Confirm the 4-gram portion, then review mango intensity, milk and ice.
