Matcha is more exposed than whole-leaf tea because it is finely milled. Good storage protects its aroma, vibrant color and balanced taste.
The five main threats
- Air
- Light
- Heat
- Moisture
- Strong odors
Home storage
Before opening, store the sealed package in a cool, dry place. After opening, close it tightly and refrigerate it. Use clean, dry utensils and never return damp matcha to the container.
Café storage
- Date every opened package.
- Keep working quantities small.
- Return the main package to refrigeration promptly.
- Use first-in, first-out rotation.
- Keep matcha away from coffee, spices and flavored syrups.
Managing condensation
Open a cold package only after it has warmed while still sealed. Do not repeatedly move a large open package between a humid bar and refrigeration.
